The very best matcha in Japan is milled with commercial level stone mills slowly with large electric-operated operated stone mills that cost over $5000 (sometimes as much as $20,000), but for personal use, use in cafes, use in milling small quantities, this hand operated version is perfect. 

Other sizes are also available, but remember, the lower weight of the mill, the larger grains you get. Stone craftsman Nakayama has created his stone mill with precision fine grooves, which when combined with the hardness of the stone allows you grind fine matcha. Of course, the mill size is smaller than commercial mills, but using the slow speed of hand powered spinning at which you grind, and if using high quality tencha, you should be able to create fine and fresh matcha—which will have a stronger aroma than commercial matcha of equivalent quality due to its freshness.

Stone Quality

Nakayama-san uses a kind of granite from a quarry Aji Village, Kagawa Prefecture, called Aji-ishi 庵治石, known for its high level of hardness (7, the same as crystal).

Lacquerware

Sanuki lacquerware is used for the beautifully finished tray. The tradition dates back to the early 19th century when Master Craftsman, Zokoku Tamakaji (1806-1869), brought the craft to the region (Kagawa Prefecture).
